Rice Krispy Treats with Chocolate Sunbutter

Although my son has a lot of food allergies, I don't want him to feel left out at school when other kids eat certain food. At the end of each month I get the monthly menus from the director of his school and replicate allergy-friendly versions of similar dishes. This works really well for this finicky eater.
This recipe is wheat-free, dairy-free, egg-free and soy-free if you use AllerEnergy Marshmallows. You can get most of the ingredients at the Whole Foods store. However, I have not seen AllerEnergy Marshmallows at the Whole Foods. You can order from their website directly by clicking the name below.

- In a large pot, melt Earth Balance Soy-Free Spread over low heat. Once melted, add marshmallows. Stir constantly to make sure the marshmallows are not burned. Turn off the heat when the marshmallows are melted. Add the rice cereal to the melted marshmallows. Mix really well and transfer to a 8.5 x 13 inch baking dish. Press down the mixture really hard and let it cool.
- Melt the remaining Earth Balance Soy-Free Spread in a small pot. At the same time, melt the chocolate in the microwave over medium to low heat. I normally heat for half a minute. If it is not melted, I add another half a minute. The key is not to overcook the chocolate. If you don't like the microwave method, you can use the double boiler method. That is, over low heat on a stove top, add chocolate to a small pot which is sitting on top of a bigger pot. The bottom pot is filled with water but the water should not touch the bottom of the small pot. Stir constantly until the chocolate is melted.
- Stir in the sunflower seed spread and the melted butter. If it is a little dry for you, add a little melted Earth Balance Soy-Free Spread or water. Combine the mixture to reach a smooth consistency.
- Using a cake spatula, spread the chocolate sunbutter evenly over the rice krispy treats. Set side and let it cool.
- Cut into desired shapes and serve.
