Hi, I am the mother of a food allergic child. My son was diagnosed with multiple severe food allergies in 2007. Our allergist advised us to strictly avoid the eight common food allergens, i.e., cow’s milk, egg, soy, wheat, peanut, tree nut, fish and shell fish. I was devastated by the news. The first question I asked myself: “What am I going to feed a very allergic and finicky eater?” But I was determined to take on this new challenge. I decided that having multiple food allergies cannot stop my son from having those yummy French and Chinese comfort food both my husband and I grew up with.
I quickly found out that there were not a lot of hypoallergenic cookbooks free of ALL eight common food allergens other than Cybele Pascal’s first cookbook, The Whole Foods Allergy Cookbook, Cindy Moseley's "Great Foods Without Worry," and Emily Hendrix's "Sophie-Safe Cooking." I also noticed that most of the wheat-free recipes and mixes on the market are made of refined carbohydrates such as rice flour and tapioca flour which are in conflict with my pre-diabetic condition. I realized the challenge that I face in baking whole-grain wheat-free, egg-free, milk-free and soy-free breads and desserts. I researched, analyzed and experimented mixing different types of wheat-free or gluten-free flour to achieve my family’s optimal health goal. I explored more natural methods to substitute the above common food allergens in our daily diet. I was also surprised to discover many wheat-free or gluten-free recipes in Chinese and Asian cooking. Since then, I have been on this incredible journey of innovation.
Over the past three years, I have developed many hypoallergenic and healthy recipes. I have also gained knowledge and efficiency in identifying food items for the kitchen of an allergic family. A few weeks ago I met a mom at the Whole Foods who encouraged me to share my knowledge with those parents of allergic children and whoever suffers from severe food allergies. So here it is!
